Celebrating Bake Off week four: Lemon Posset with Raspberries
It’s the time of the week where we mark the return of The Great British Bake Off to screens with a recipe of our own for you to make. This week, the Bake Off contestants are striving to impress judges by creating the ultimate dessert. But when it comes to perfect puddings, there are few more classic than a posset, a concoction of tart fruit and set, sweetened cream with a history dating back more than 500 years. Simple to make yet effortlessly sophisticated, it’s perfect for a romantic dinner or just as a weeknight treat.
- 35g fresh raspberries
- 35g fresh blueberries
- 285ml double cream
- Finely grated zest of 1 lemon
- 75g caster sugar
- Juice of 1 lemon
Ingredients
Serves 2
To garnish:
- Fresh mint or basil leaves
- Fresh raspberries
- Fresh blueberries
Method
- Step 1: Place the raspberries and fresh blueberries in two small glasses.
- Step 2: Place the cream, lemon zest and caster sugar in a pan over a moderate heat and bring to the boil. Continue to boil for 3-4 minutes.
- Step 3: Remove from the heat and stir in the lemon juice. Strain the mixture into a jug to remove the lemon zest.
- Step 4: Pour the lemon mixture into the glasses over the raspberries. Cool and refrigerate for 3-4 hours until set (ideally overnight).
