​Fancy that: forest friends

Inspired by the collection of cute – and, dare we say, delicious – characters found in our Enchanted Forest, we’ve created some extra Christmas treats that are exclusive to the fancy counters in the shops at our six Café Tea Rooms. While their chocolate counterparts make wonderful gifts for the big day itself, these fancies are ideal for serving at parties, teatimes or whenever you want to bring some festive magic to the table.

Harriet the Hedgehog Sponge Fancy

We’re famous for our fancies, but they’re not all coated with smooth fondant – sometimes they’re a little more spiky!

Each Harriet the Hedgehog fancy starts life as our classic light, buttery Genoese sponge sandwiched with vanilla buttercream. Our bakers then hand-mould a marzipan coating into an unmistakable hedgehog shape. A special textured rolling pin is used on more marzipan to create Harriet’s patterned ‘spines’. Then we add the final touch – a cheeky smile under her snout.

Florence the Fox Cupcake

Ready to show her mischievous face at any Christmas party, Florence the Fox is made at our Craft Bakery using our most tempting brownie recipe – rich, dense and filled with Swiss Grand Cru chocolate. We add a layer of chocolate buttercream, then create her foxy features from marzipan and royal icing.
