A diamond-shaped edition of our famous Fondant Fancies made with a zesty lemon sponge and a rich lemon curd centre.

When the Genoese sponge is removed from the ovens, the top is baked a darker colour than the rest. We remove this layer and reveal the white sponge underneath. We call this 'crumbing'. Why do we do it when eventually the whole sponge will be encased in fondant an no-one will see darker sponger? Because we're Bettys and we like things just so - just like you do.
