A sumptuous, tender almond cake – somehow rich yet light, soft yet easy to slice – sandwiched with tangy raspberry jam and topped with fondant icing in a dainty, wavy design. An outrageously moreish, versatile cake that you can polish off over a lovely weekend at home, yet also serve for parties or Afternoon Tea.

Sometimes our bakers show off with ornate scrolls of icing or a cake of many tiers…but often, it’s just a simple thing done incredibly well, with a generous quantity of butter combined with care and precision.
