Meet the good eggs in Bettys Chocolate Room
Meet our chocolatiers Kirsty Mitchison and Josie Raine, stars of this year's Easter film. With more than half a century of Bettys experience between them, there’s no one better to take care of this Easter’s batch of good eggs.
Having originally trained as a chef, Kirsty joined Bettys in confectionery and, as she puts it, “I elbowed my way into the chocolate department at Easter!” She adds, “Eventually they couldn’t get rid of me.”
Having totted up an amazing 37 years with Bettys, Josie has worked everywhere from our Café Tea Rooms to cakes and confectionery. With her formidable piping skills, it’s no surprise that our Milk Chocolate Happy Easter Egg is her favourite to decorate.
Of course, Easter is a very busy time for our chocolatiers. Josie starts crafting chocolate at 2am each day – now that’s dedication. “I do like the early starts, because it’s quiet and you can get a lot of work done,” she admits.
After a morning spent perfecting every last detail, it’s good to stretch those legs, so a few times a week she swaps her chocolatier’s whites for running shoes on her way out of the Chocolate Room: “It’s great to get into the countryside, where you’re on your own in an open space with the scenery and everything,” she says. “It just makes you feel good, all those endorphins.”
Kirsty, meanwhile, is a longtime pool expert. As well as playing in two York leagues, last year her county team made it to the national finals. “I’ve made some really good friends in the pool community; we’re one big family, just like Bettys,” she enthuses. And the secret of winning at pool? According to Kirsty, it’s a lot like decorating an egg: “Coordination, but also remaining calm and being patient.”
